A couple of reasons


Like a Wok, they should not be scrub in washing so they are season to the "family's taste".

The are real thick steel. They hold heat. If you are frying (vegetables, french fries in oil, fish in oil) you will get that deep fry.

I had my mother's for years and the past two years I am been using the hell out it. It is harder to clean, but for certain things it just is better. Eggs over lightly are never done in my cast iron skillet.

They are great for camping because they hold heat to keep food warm.
